Tropical chia pudding parfait๐Ÿ๐Ÿ’“๐Ÿ˜‹

INGREDIENTS

For the chia pudding: 

  • 5 tbsp of chia seeds
  • 300 ml of coconut milk 
  • Purรฉed fresh pineapple (made of 2 pineapple slices)
  • 2 tbsp of maple syrup
  • 2 tbsp of coconut yoghurt 
  • 1-2 tsp of Rawnice Pink Pitaya powder
  • Optional: 1/4 mango flavoring (we used vegan-friendly flavoring from HaloPantry )

For the parfait:

  • 2 tbsp of coconut yoghurt
  • 1 slice of fresh pineapple, chopped into small chunks
  • Banana slices + fresh pineapple for the top



DIRECTIONS

  1. In a bowl, combine chia seeds with coconut milk, maple syrup, pineapple purรฉe and mango flavoring. 
  2. Mix everything well and put in the fridge for around 1  hour, stirring from time to time to avoid the lumps. 
  3. Before serving, add to the pudding 1-2 tsp of pink pitaya powder and mix well. Stir in around 2 tbsp of yogurt to make the pudding more creamy.
  4. To make the parfaits: In a glass or jar, add to the bottom 2 tbsp of yogurt and fresh pineapple chunks. Fill the glass with chia pudding, add pineapple chunks and banana slices on top.
